Vinous Neal Martin - 01 Aug 24
The 2023 Chablis Village was quite reticent on the nose when tasted from barrel, in the same vein as the Petit Chablis, though it begins to open after a few swirls of the glass. The palate is very lemony, with hints of orange pith, a fine umami sensation

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
